abstract | The present invention relates to methods for producing a yeast mass having a high proportion of polyphosphate, said methods comprising the following steps: fermenting yeast cells in an orthophosphate-deficient medium, drying the cells, transferring and fermenting the cells into an orthophosphate-containing medium, and further drying the cells. The present invention further relates to methods for producing yeast extracts having a high proportion of polyphosphate, more particularly in paste or powder form. The present invention also relates to yeast masses and yeast extracts having a high proportion of polyphosphate which can be obtained using the methods according to the invention. |
