abstract The present method for producing edible granular roe from the gonads of aquatic organisms includes cleaning roe grains of aquatic organisms, the food product containing, as roe grains, Artemia sp. cysts. The cysts are cleaned by means of decapsulating same, the cleaned grains of Artemia sp. roe are dried to a residual surface moisture that is no greater than 5-50 wt.%, and layers of the product are formed in polymer bags and are processed using a stream of accelerated electrons produced in a pulsed linear electron accelerator, with the energy of the accelerated electrons being 2.5-5 MeV and the absorbed radiation dose being no less than 20 kGy. Before the layers of the food product are formed in the polymer bags for irradiation using the accelerated electrons, organoleptic additives and/or preservatives are additionally added in the following quantitative component content, wt.%: 3.0-30.0 organoleptic additives and/or preservatives; remainder up to 100% - decapsulated Artemia sp. cysts.
