The present invention pertains to a method for producing 2,3-butanediol from a glucose or cassava saccharified solution using a recombinant yeast in which the activities of pyruvate decarboxylase and alcohol dehydrogenase enzymes are inhibited and 2,3-butanediol biosynthesis-related foreign genes are introduced. To arrive at the present invention, a recombinant polyploid yeast was developed, which has a high sugar consumption rate and a high growth rate, and has excellent resistance to fermentation inhibitors and is thus suitable for large-scale fermentation using various biomass saccharification liquids, and it was confirmed that 2,3-butanediol can be produced at higher productivity and yield through said recombinant polyploid yeast, compared to recombinant haploid yeasts subjected to the same transformation. |
