titleOfInvention Method for manufacturing jelly added with alginate beads containing peach flesh
abstract The present invention relates to a method for manufacturing a jelly added with alginate beads containing peach flesh, with the purpose of improving the mouthfeel of a jelly or jelly containing herbal medicine by preparing alginate beads containing peach flesh and mixing the beads with the jelly or jelly containing herbal medicine. In addition, the purpose of the present invention is to propose a component ratio which allows the beads to be uniformly formed at appropriate viscosity and to maintain proper particle hardness when the alginate beads containing peach flesh are prepared. Moreover, the purpose of the present invention is to propose a component ratio at which the beads have smooth surfaces and can give a suitable mouthfeel and improve a taste of the fruit flesh, whereby when taking the jelly containing herbal medicine, a user does feel a reduced characteristic taste of the herbal medicine due to the mouthfeel of the beads used for the manufacture of the jelly containing herbal medicine. Particularly, the purpose of the present invention is to propose a concentration of alginic acid and a concentration of a CaCl2 solution as well as a ratio of water to fruit flesh, which are optimal conditions for preparation with peach flesh. To this end in the present invention, preferably, fruit juice is obtained by grinding fruit flesh, concentrates, and the like in a mixer and mixing with alginic acid, and added dropwise to and immersed in a calcium chloride solution to form a coat on surfaces of the fruit juice drops, followed by mixing the beads thus obtained with the jelly containing herbal medicine.
