abstract | Provided is a food particulate-containing fat and oil composition that exhibits spreadability under low- and high-temperature conditions. This fat and oil composition contains food particulates, has features (1)-(5), and satisfies at least one of conditions (A)-(C). (1) The contained amount of the food particulates is 25-90 mass%. (2) The total content of fat and oil is 10-70 mass%. (3) The mode diameter after an ultrasonic treatment is 0.3-200 μm. (4) The sugar content is 15-60 mass%. (5) The water content is at most 20 mass%. (A) The stress as measured with a dynamic viscoelastic measurement device under a prescribed condition is at most 0.2 N. (B) The loss tangent as measured with a dynamic viscoelastic measurement device under a prescribed condition is at least 1.000. (C) The measurement obtained from a Bostwick viscosimeter (20°C, 10 seconds) is 0.1-20 cm. |
