[Problem] To provide a texture-improving composition which can be processed in a short amount of time using conventional equipment. [Solution] The present invention provides a texture-improving composition characterized by containing a polyphenol oxide polymer. The polyphenol is preferably derived from at least one selected from the group consisting of sugar cane, apples, tea, grapes, coffee, chocolate, and strawberries. The texture-improving composition is obtained by a method comprising: adjusting a polyphenol-containing solution to a pH of 3-10, the solution containing 0.001-5% of a pure polyphenol or 0.001-10% of a polyphenol mixed with sugars, amino acids, or fats and oils; adding 0.01-1% of an enzyme having polyphenol oxidase activity to the solution; and heating the resultant solution at 0-65°C for 1-24 hours while supplying air. |
