abstract | The present invention relates to a method for obtaining a low-calorie sweetener from Smallanthus sonchifolius . The method comprises the steps of: conditioning Smallanthus sonchifolius tubers; obtaining a Smallanthus sonchifolius extract, by liquefying the tuber in water and subsequently filtering same to recover the liquid extract; fermenting the Smallanthus sonchifolius liquid extract; and preserving the non-caloric sweetener. The method according to the invention produces a low-calorie sweetener suitable for human consumption, especially for people with simple-sugar- and carbohydrate-restricted diets, such as, inter alia, diabetic and overweight patients. The method provides an alternative to chemical synthesis in the supply of non-caloric or low-calorie sweeteners. |
