abstract |
The present invention relates to a composition comprising 5 to 100% by weight of a structured aqueous phase, the composition containing from 0.1 to 10% by weight of sericin by weight of water, said sericin having a proportion of beta sheet in the secondary structure that exceeds 80%. It has been observed that sericin having a proportion of beta sheet in the secondary structure which exceeds 80% is an excellent water structuring agent and can be used in a suitable way to structure the aqueous phase of a wide range of products, such as cosmetics, pharmaceuticals, food products and detergent compositions. |
