abstract | The present invention relates to inexpensive production of thick fermented milk by a simple production process. The fermented milk is produced by carrying out a step of preparing milk raw material in which a milk raw material having a fat content greater than or equal to 5% by weight is prepared, a homogenization step wherein the milk raw material is homogenized such that its median particle size becomes less than or equal to 0.7 μm, and a fermentation step in which the homogenized milk raw material is fermented. |
