abstract | The present invention relates to a process for the efficient production of a fat which contains palmitic acid linked to the 2-position of a triglyceride by at least 50% by weight relative to the total amount of palmitic acid included in the constituent fatty acids of triglyceride. For this purpose, the present invention relates to a process for the production of a fat comprising: (a) a step of obtaining a mixture which contains a starting fat containing 30 to 100% palmitic acid by weight relative to the total amount of 2-position-bound fatty acids of a triglyceride and a fatty acid or a lower alkyl ester of fatty acid which contains 70% by mass or more of an unsaturated fatty acid at C18 or higher, in a ratio such as the palmitic acid content to the total amount of fatty acids attached to positions 1 and 3 of the triglyceride in the starting fat, after selective transesterification at positions 1 and 3 is 0.15 to 0.65 times the level before transesterification; and (b) a step of transesterifying the mixture with a lipase selective for positions 1 and 3 and obtaining a transesterification product having a reaction yield greater than or equal to 70%. |
