The present invention improves the stability of a dry deamidase protein composition by coexisting both a deamidase protein and magnesium chloride in a dry enzyme composition, or by making adjustments so that the pH is at least 2 and less than 5 when the composition is dissolved in water at a concentration of 1% w / v.
