abstract | [Problem] The present invention provides a sesame-containing liquid seasoning in which the peculiar aroma of sesame seeds is enhanced and the peculiar aroma that becomes addictive and peculiar is felt. [Solution] The present invention is a liquid seasoning containing sesame, which comprises linear alkanethiols and dimethylpyrazines which are at least one of 2,5-dimethylpyrazine and 2,6-dimethylpyrazine. And the ratio of the peak area of the linear alkanethiol to the peak area of the dimethylpyrazines is 0.05 or more when the aroma component of the liquid seasoning is measured by solid phase microextraction-gas chromatography mass spectrometry It is less than 1.0.
