titleOfInvention METHOD FOR CULTIVATING LACTIC ACID BACTERIA
abstract The present invention relates to a method of culturing lactic acid bacteria which inhibits the production of lactic acid in a variety of lactic acid bacteria and allows a high density culture. The lactic acid bacteria are cultivated by cultured cuvée culture. When the lactic acid bacteria are cultivated by cultured batch culture, the production of lactic acid is inhibited compared to the culture by batch culture, and the inhibition of the growth of lactic acid bacteria caused by high concentrations of lactic acid can then be scaled down. The culture of lactic acid bacteria can thus be carried out at a density greater than that in the case of cultured cuvée lactic acid bacteria.
