The present invention relates to an octenylsuccinic acid modified starch (OSA modified starch) degraded by at least one enzyme capable of cleaving the 1,4 bonds of a starch molecule from the non-reducing ends to produce short-chain saccharides, the non-covalently bound free octenylsuccinic acid content in the modified OSA starch being less than about 0.50% by weight, based on the total mass of the modified starch, and the content of alpha-1 bonds, 6-glycosidic agents being greater than 12%, a process for preparing it, and an encapsulating agent including it, and a method of encapsulating an active agent with said encapsulating agent. |
