The present invention addresses the problem of providing a technique for manufacturing a pericarp extract having a superior flavor from a citrus pericarp. On the basis of the present invention, it is possible to obtain a superior pericarp extract by subjecting a citrus pericarp of 5 cm or less to enzymatic treatment by using hemicellulase and/or protease and by subsequently performing solid-liquid separation thereof. |
