The present invention relates to a method for producing a pre-gelatinized type 3 and 5 mixed resistant starch, produced by thermoplastic extrusion. The products produced can be used directly for consumption in the form of breakfast cereals or expanded extrudates (snacks), or in the form of a pre-cooked and/or instant powdered ingredient for food formulations, which acts as a thickener, encapsulant, humectant or gelling agent. |
