abstract The present invention discloses a process for preparing a soluble fibre comprising galacturonan oligosaccharides having a degree of polymerization (DP) of 2 to 20 from a fruit and / or vegetable material comprising a) removing starch from the fruit and / or vegetable material, b) incubating the fruit or vegetable material of step a) at a pH of between 0.5 to 3 and a temperature of between 60 and 98°C, c) separating the material from step b) into a solid fraction and a liquid fraction, d) isolating fibre from the liquid fraction, and e) bringing the fibre from step d) into contact with an enzyme having endopolygalacturonase activity, and preparing the soluble fibre.
