abstract |
The present invention provides a process of preparation of a leaf tea product with black tea characteristics comprising the steps of: a. incubating fresh tea leaf at a temperature in the range 4°C to 60°C under anaerobic conditions for a period of 4 to 50 hours; b. creating micropores having diameter in the range of 5 to 100 µm on the incubated leaf; c. exposing the leaf to a temperature of 15 to 35°C for 15 minutes to 4 hours. |
