abstract | Provided are: a method for producing a 3,4,5-tricaffeoylquinic acid-containing material, whereby it becomes possible to efficiently utilize 3,4,5-tricaffeoylquinic acid that is contained in a plant body intrinsically; and a 3,4,5-tricaffeoylquinic acid-containing material. The method for producing a 3,4,5-tricaffeoylquinic acid-containing material is a method for producing a 3,4,5-tricaffeoylquinic acid-containing material that contains 3,4,5-tricaffeoylquinic acid. The method comprises a heating step of heating at least one plant body selected from the group consisting of a plant body belonging to the family Convolvulaceae and a plant body belonging to the family Asteraceae and then raising the temperature of the plant body to 100ÂșC or higher within 30 seconds after the initiation of the heating to produce a 3,4,5-tricaffeoylquinic acid-containing material X. |
