abstract |
The present invention relates to a method for optimizing production of solid spawn using Saccharomyces cerevisiae Y204 (KACC93237P). Particularly, as a result of checking the optimal condition for producing solid spawn of Saccharomyces cerevisiae Y204 (KACC93237P), the following findings were confirmed: the growth rate and the number of live bacteria were the highest when a S. cerevisiae Y204 spawn was cultivated on a YPD culture medium for 24 hours at 25°C with a mixing rate of 150 rpm; spawn survival rate increased when 10% of skim milk, 1% of lactose, and 7 to 10% of trehalose were added, as excipients, when producing the solid spawn; freeze-drying showed 1.2 to 1.4 times fewer live bacteria but resulted in a contamination rate that was approximately twice as low compared to drying with hot air, when drying the solid spawn of S. cerevisiae Y204 enzymes. Therefore, the optimal condition for the solid spawn according to the present invention could be useful in the method for producing the solid spawn of Saccharomyces cerevisiae Y204 (KACC93237P). |
