abstract The present invention belongs to the field of bioengineering. Powder and pressed juice made from incubated brassica oleracea cultivar italica, methods for preparing same, and uses thereof are disclosed. A method for preparing powder made from incubated brassica oleracea cultivar italic comprises: crushing and incubating at least one of the stalk, the leaves, and the florets of brassica oleracea cultivar italica, which are the three organs thereof; pressing to obtain pressed juice; and then freeze-drying or spray-drying said juice to obtain powder made from incubated brassica oleracea cultivar italica. In the methods of the present invention, the endogenous enzyme system of brassica oleracea cultivar italica is used to hydrolize the glucosinolates of same into cancer-fighting sulforaphane; and, all of the other nutritious and health-promoting components in brassica oleracea cultivar italica are concentrated. The process is simple, easy, and produces powder that disperses well in water, and is applicable in fields such as foods, health products, and medicines.
