abstract The present invention relates to the fruit growing industry, in particular to a composition for coating fruit characterised in that it comprises: a) between 0.5% and 1.5% (w/v) chitosan; b) between 0.5% and 1% (v/v) glycerol; c) between 0.03% and 0.1% (w/v) methylcellulose; and d) between 1.25% and 2.5% (w/v) gelatine. The composition produces a semipermeable layer around the fruit, preventing superficial scalding and partially inhibiting ethylene production, as well as improving other preservation parameters of same such as firmness, thus increasing the shelf life of the coated fruit. The invention further relates to the use of said coating composition to increase the shelf life of fruit, especially apples and pears.
