abstract The invention relates to an active mixture for producing a post-harvest coating and the production processes thereof, said post-harvest coating being more stable and compatible with many compounds, regardless of their pH, which permits the simplification of the application processes and increases the variety of products on which said coating can be applied. Said coating can be used widely and in a safe manner in organic agriculture, which is achieved as a result of the chitosan being encapsulated thanks to the use of surfactants inside the emulsion. This permits the germicidal and nematicidal activity, as well as the range of solubility to increase substantially, and same is compatible with other post-harvest waxes with alkaline pH. According to the invention, the components for forming an active mixture for the production of the lipid, bioactive, biodegradable and biostable emulsion, for creating the post-harvest coating intended for the organic agricultural and fruit and vegetable sector, are: i. fumaric acid; and ii. chitosan.
