abstract | The present invention provides a method for high-sensitivity quantification of hydrophobins, which cause gushing of sparking malt beverages, and a method for using said method to predict gushing of sparking malt beverages. This method for quantification of hydrophobins is a method for quantifying hydrophobin content of a test sample, including (A) a step for decomposing peptide bonds at the amino group side of aspartic acid resides of protein in a test sample, to prepare a peptide fragment mixture, and (B) a step for quantifying peptide fragments comprising an amino acid sequence represented by at least SEQ ID NO.: 1, from the peptide fragment mixture prepared in (A). |
