abstract The purpose of the present invention is to provide a technique for producing wheat gluten having high whiteness and good color tone. Wheat gluten having high whiteness and good color tone can be obtained by carrying out: a first step in which (i) wheat flour, (ii) calcium salt, and (iii) water are mixed to form dough; and a second step in which the dough is washed with water so as to wash away the starch, and wheat gluten is recovered.
