abstract | Provided is a method which can make it possible to prevent the non-productive absorption of an enzyme to lignin at low cost, and therefore can make it possible to produce a sugar that contains glucose as the main component with high efficiency. That is, a method for producing a sugar according to the present invention comprises: a first step of adding an animal protein and/or a plant protein to an aqueous sodium hydroxide solution or an aqueous calcium hydroxide solution to cause the reaction therebetween, thereby preparing a water-soluble protein; a second step of adding the water-soluble protein to a slurry containing a biomass; and a third step of adding a digestive enzyme to the slurry simultaneously with or subsequent to the addition of the water-soluble protein to the slurry to decompose cellulose and/or hemicellulose contained in the biomass with the digestive enzyme, thereby producing the sugar containing glucose as the main component. |
