abstract The present invention addresses the problem of providing: a method whereby the amount of the 3-chloropropane-1,2-diol (3-MCPD) and fatty acid esters thereof which an unheated fat should contain if heated can be accurately predicted; and a process for producing a purified fat reduced in the content of 3-MCPD and fatty acid esters thereof, the process being based on said method. The present invention provides a process for producing a purified fat, the process comprising: a treatment step in which a raw fat that has not undergone a heat treatment at 180ºC or higher is subjected to one or more steps selected from the group consisting of an alkali deacidification step and the step of degumming with water or an acid, thereby obtaining a treated fat; a prediction step in which the total chlorine content in the treated fat is determined, thereby obtaining a predicted value of the amount of the 3-MCPD and fatty acid esters thereof which should be contained in the fat in the case where the treated fat is heated at 180ºC or higher; and a selection step in which the treated fat is selected out in cases when the predicted value is not greater than a given value.
