abstract |
The present invention relates to a process for producing a piece of soft confectionery, wherein the process comprises as process steps a) providing a soft precursor confectionery mass, characterized by a water content in a range from 15 to 24% by weight, with respect to the soft precursor confectionery mass; and b) moulding the soft precursor confectionery mass by means of a nozzle having an outlet opening by overlaying a substrate with the soft precursor confectionery mass to obtain a moulding, wherein the outlet opening of the nozzle follows a three-dimensional trajectory; wherein the process further comprises hardening of the moulding to obtain a piece of soft confectionery. The invention also relates to a piece of soft confectionery, obtainable by the process; a device containing a soft precursor confectionery mass; a process for producing a piece of soft confectionery with the device; a use of the device; and a use of a soft precursor confectionery mass. |
