abstract The invention relates to a device and a method for producing ice cream. The device comprises an immersion bath (1) with an interior (2) filled with a cryogenic liquid, a cassette (3) that can be moved in the interior (2) of the immersion bath (1) and comprises casting molds (8) arranged in the cassette for receiving the ice cream mass, a filling device (7) for filling the casting molds (8) with the ice cream mass, a processing section for freezing the cassettes (3) with the molds (8), and a heating device for thawing the molds (8) filled with the ice cream mass for a subsequent packaging process. The method for producing ice cream includes the steps of treating the casting molds with liquid nitrogen and subsequently filling the ice cream mass.
