abstract The invention relates to a simple and economic method of germination which, using light, enables germinated whole rice grains and/or products which are derived therefrom and have high contents of biologically active compounds, preferably γ-oryzanol and GABA, to be obtained. The germinated whole rice grains obtained or the products derived therefrom are used to produce cosmetic or food compositions, which, in addition to their nutritional value, have a high content of healthy bioactive compounds, rendering them useful both as a wholefood and for preventing and/or reducing the risk of the onset of chronic degenerative diseases.
