abstract Provided is a versatile method for inexpensively and selectively producing α-glucoside. Two mixtures (i and ii) interact in the presence of phosphoric acid, α-phosphoglucomutase (EC 5. 4. 2. 2), β-phosphoglucomutase (EC 5. 4. 2. 6), and the cofactors thereof; mixture (i) being a mixture of a saccharide raw material and an enzyme, which creates α-glucose-1-phosphoric acid by reversibly subjecting the saccharide raw material to phosphorolysis; and mixture (ii) being a mixture of an enzyme, which creates β-glucose-1-phosphoric acid by reversibly subjecting α-glucoside to phosphorolysis, and a substance which acts as a sugar acceptor in the reverse reaction of said enzyme.
