abstract An improved system and process for rapidly producing distilled spirits having characteristics associated with a much longer maturation process is provided. The method involves contacting wood with an unmatured distillate under heated conditions. The disclosure also provides a method for producing a spirit having characteristics associated with a matured spirit where the method comprises measurement of chemical markers to determine the progress of maturation.
