abstract The present invention is directed to a process to provide soy base (5, 11) from soybeans (1) comprising the following steps: a. Providing an aqueous slurry comprising ground soybeans (3); b. Separating (4) the slurry (3) provided at step 'a' into a first fraction (6) rich in insoluble soybean parts and a liquid second fraction (5) poor in insoluble soybean parts, using a suitable separation means; c. Adjusting the water content (7) of the first fraction (6) to provide from 1 to 20 wt. % of total solids (8); d. Subjecting the first fraction (8), with from 1 to 20 wt.% of total solids to ultrasonic treatment (9), wherein the ultrasonic treatment is applied at a frequency of from 16 to 100 kHz, with an average energy input of at least 5 Joules per milliliter of said first fraction (8); e. Separating (10) the ultrasonic treated first fraction (8) into a third fraction (12) rich in insoluble soybean parts and a liquid fourth fraction (11) poor in insoluble soybean parts, using a suitable separation means; wherein the soy base is provided as the liquid second (5) and liquid fourth fraction (11). It was found that the process according to the invention results in a more efficient process to provide soy base and extract one or more water-soluble and/or water-dispersible compounds from soybeans, such as proteins, carbohydrates (such as sugars, oligosaccharides and soluble dietary fibers), oils, vitamins, minerals, carotenoids, and isoflavones.
