abstract |
In this patent it is proposed the quality management of alcoholic fermentation process, for example of beer, through the use of spectroscopy UV-VIS-SWNIR high-debit technologies (wave lengths between 200 and 1200 nm) in order to monitor the process by using the data collected on-line. This invention describes a universal method and probe for the monitoring of beer quality during fermentation, through the use of a spectroscopy UV-VIS-SWNIR (ultraviolet/ visible/short wave proxy infrared). A processing system is set o calculate and execute a multivariable provisional model, from the captured spectra, of fermentation control parameters and/or metabolite concentration. |
