abstract | The invention relates to a method comprising a culture with strains of methylotrophic yeast in order to produce, and secrete into the culture medium, polypeptides having phytase activity, as well as comprising the production of preparations of the polypeptides and the use of said preparations for increasing the bioavailability of phosphorus and nutrients in phytate-rich ingredients. The method of the invention is characterised by the production of polypeptides encoded by polynucleotides that are obtained synthetically and in that it provides high levels of phytase activity. In particular, the invention relates to preparations of polypeptides having phytase activity within a pH range of 2.5 to 9 and a temperature range of 25 to 80°C, high thermal stability, stability in relation to digestive proteases, and to the use thereof in various industrial applications. |
