The present invention provides a nitrate reduction method which is capable of having a nitrate reduction reaction proceed efficiently without using a noble metal catalyst such as platinum. In the nitrate reduction method of the present invention, a reduction reaction of nitrate ions and/or nitrite ions is caused to proceed in the presence of a carbon-based material that contains at least one substance selected from among graphite, graphene and amorphous carbon. |
