abstract The invention relates to a process for producing fish cells with an elevated content of highly unsaturated fatty acids and to the use of these fish cells for obtaining fish-specific products, for example fish meal, fish proteins and fish oils, and to fish cells and fish cell cultures suitable for this purpose. The process according to the invention for production of fish cells having an elevated content of highly unsaturated fatty acids comprises the cultivation and propagation of proliferating fish cells at a temperature of 1‑35°C in a cell culture medium and is characterized in that the cultivation and propagation of the proliferating fish cells are effected under at least one of the following conditions: a) the cell culture medium comprises an addition of at least one short-chain, polyunsaturated fatty acid in a concentration of 1-500 µM; b) the fish cells are cultivated at at least 2, preferably at least 3, different temperatures. Particularly good results are achieved by a process in which both conditions a) and b) are fulfilled.
