abstract The present invention relates to the flavors industry. More particularly, it relates to an inverse emulsion comprising a hydrophilic flavor or sweetener, lecithin, thaumatin, a polar solvent and a hydrophobic component. The invention also relates to the use of such an emulsion in flavored products and to a method for stabilizing an inverse emulsion comprising adding thaumatin to the dispersed phase of the emulsion.
