11515.204-WO 25 ABSTRACT The invention relates to a process for producing a triglyceride product comprising the steps of: (a) subjecting a triglyceride feedstock comprising at least 25 mole%, based on the total amount of acyl groups in the triglycerides, unsaturated C18 fatty acid residues to an alcoholy- sis reaction with an alcohol having 1 to 6 carbon atoms (C 1 -C 6 ) to obtain a reaction mixture, 5 wherein the conversion is at least 65%; (b) separating from the reaction mixture produced in step (a) fractions comprising (i) unsaturated C18 fatty acid alkyl esters and (ii) glycerides; and (c) using the fractions (i) and (ii) or subfractions thereof in a condensation reaction catalyzed by a lipase to produce a triglyceride product comprising at least 80 mole% unsaturated fatty acids.10 |
