abstract |
Disclosed is a DOI synthase having superior properties including stability to heat and pH compared to those of conventional enzymes. Also disclosed is a process for producing DOI using the enzyme. Specifically disclosed is a 2-deoxy-scyllo-inosose synthase having the properties (1), (2), (4), (6) and (7) mentioned below and also having the property (3) and/or (5) mentioned below.n(1) Activity: the enzyme has a function of converting glucose-6-phosphate into 2-deoxy-scyllo-inosose.n(2) Optimum pH range: 7.0 to 7.7.n(3) Stable pH range: 6.0 to 8.0.n(4) Optimum temperature range: 55 to 70˚C.n(5) Stable temperature range: 20 to 46˚C.n(6) Coenzyme: NAD + is utilized.n(7) Molecular weight : 39000 to 42000. |
