abstract |
The invention relates to a method for obtaining protein preparations from lupine seeds and to protein preparations which can be produced according to said method. According to said method, lupine seeds are dehulled until a residual hull content of = 5 wt.% remains or dehulled lupine seeds having a residual shell content of = 5 wt.% are used. After flocculation or comminution of the dehulled lupine seeds, one or more extraction steps are carried out by means of which the aromatic substances epoxydecenale, l-octen-3-one and 2-isoproyl- 3-methoxypyrazme, fat and/or oil and components, which provide the reddish colour in protein preparations, are at least partially separated. The extraction steps are carried out using one or more solutions and/or mixtures of solutions, the polarity thereof being greater than the polarity of hexane and less than the polarity of water. The protein preparation thus obtained can be used in a plurality of applications due to its light colour and its corresponding sensory properties and the balanced techno-functional spectrum. |
