Provided is a method for producing an extract of an astaxantin-containing yeast belonging to the genus Phaffia which is widely usable in the fields of foods, health foods, supplements, nutritional supplements, feeds, drugs, cosmetics and so on. In producing an astaxantin-containing Phaffia yeast extract from a yeast belonging to the genus Phaffia, addition of a lipid exhibits various effects of increasing the astaxantin yield in the astaxantin-containing Phaffia yeast extract, facilitating the removal of an organic solvent remaining in the extract, improving the heat stability of astaxantin, and so on. |
