abstract Disclosed are: an alcohol-containing solution which abundantly contains 3-mercaptohexan-1-ol (3MH) that has excellent aromaticity; a process for producing the solution; a flavoring agent comprising an alcohol-containing solution that contains 3MH abundantly; and a process for producing a beverage having improved flavor.  Specifically disclosed are: a process for producing a solution containing 3MH and an alcohol, which comprises a step of inoculating a lactic acid bacterium and yeast to an aqueous raw material solution containing S-(3-hexan-1-ol)glutathione and S-(3-hexan-1-ol)-L-cysteine to produce 3MH and the alcohol, wherein the aqueous raw material solution is a solution containing a grape skin extract, the lactic acid bacterium is one capable of converting S-(3-hexan-1-ol)glutathione to S-(3-hexan-1-ol)-L-cysteine, and fermentation is carried out for 0 to 6 days after the inoculation of the lactic acid bacterium to the aqueous raw material solution and subsequently yeast is inoculated to the aqueous solution to carry out alcohol fermentation; a process for producing a beverage having an increased 3MH content, which comprises a step of mixing a solution containing 3MH and an alcohol produced by the process with a beverage; and a process for producing a fruit liquor using a grape skin extract as a raw material.
