abstract The specification describes the treatment of products, particularly fruit and vegetables to remove fungi therefrom comprising treating the products with a solution of the group comprising benzoic acid, derivatives therefrom, the salts of the derivatives. It is preferred that the treatment uses an ester of the benzoic acid and this may be a propyl ester, or a salt thereof.. The treatment can be effected wither in the field or in the packing shed and the active material can be applied to the products as a spray or a dust. The compound used may also include a sulphite or metabisulphite and the sulphite can be used with a proble which enables the percentage of the benzoate to be maintained and controlled.
