abstract The present invention relates to a process for manufacturing tagatose using oligosaccharide from soybean or water soluble sugar solution containing the same. More particularly, the process of the present invention includes selectively hydrolyzing oligosaccharide from soybeans by using alpha-galactosidase, producing tagatose from the galactose obtained from the hydrolysates through enzymatic isomerization, and separating tagatose by chromatography techniques and re-circulating non-reactants.
