A process for recovering odorous compounds from a gas originating from a process for treating a food product, comprising the step of adsorbing the odorous compounds on at least one solid food matrix by direct contact of the solid matrix with the gas. An apparatus is also provided which is adapted to conduct the described process and comprises a chamber which contains a gas originating from a process for treating a food product, evacuation means for emptying the chamber of the gas that arrives from a treatment process, and at least one adsorption column, which contains at least one solid food matrix and is connected pneumatically to the chamber so as to receive at least the odorous compounds contained in the gas originating from a treatment process and evacuated from the chamber by way of the evacuation means. |
