It is intended to provide a miso (a seasoned soybean paste) having a favorable taste, which is expected as exerting effects of inhibiting elevation of the blood pressure and/or lowering the blood pressure when continuously taken in the daily diet, and a processed food product containing the same. It is also intended to provide a method of producing a miso whereby a peptide having an ACE inhibitory activity can be efficiently produced in the miso without deteriorating the taste qualities of the miso. In one embodiment, 10% by weight or more of animal milk casein is added in the mash step and or the fermentation/ripening step. |
