Method for changing colour and pH in the production of a highly-soluble, fibre-rich cocoa extract of the type used as a fibre supplement in food, essentially characterized in that it comprises six mandatory and three optional phases or steps, namely: mandatory phases or steps – sterilization or roasting of the raw material, the two processes being mutually exclusive; enzyme treatment in order to promote extraction of the soluble components; separation of the solid phase; concentration of the liquid phase; drying of the above concentrate; optional phases or steps – grinding the shell; adding presscake; alkalinisation. |
