A method of preparing a carotenoid-rich material with the use of a centrifuged pulp that is obtained by pressing a citrus fruit, filtering (sieving) the press juice and then centrifuging, characterized by comprising, in the step of supplying the centrifuged pulp into a decanter and decanting the same, supplying the centrifuged pulp having a viscosity falling within a specific range or controlling the viscosity of the centrifuged pulp to be supplied, dividing the centrifuged pulp into a liquid having a high carotenoid content and a precipitate having a low carotenoid content and taking out the liquid thus separated as a carotenoid-rich material; the resultant carotenoid-rich material; and a carotenoid-rich product or food using the same. Thus, it becomes possible to construct an energy-saving and environmentally-friendly process for producing a carotenoid-rich product. |
