abstract The invention relates to a measuring device (30) for carrying out a differential microcalorimetric analysis of a material capable of containing crystals with regard to a reference material. The measuring device comprises: an area (25) whose temperature can be regulated; a sampling and displacing means (4) for a sample (13), and; two means (14, 15) for measuring the temperature of this sample (13) and the temperature of a reference sample (12) in the area (25) whose temperature can be regulated. The invention also concerns a method for tracking the quantity of crystals present in a material, and the use thereof for tempering chocolate.
